The Schnitzel Wagon is more than just a food truck—it’s a passion project built on community, authenticity, and a love for great food. Owned and operated by chef Charlotte, the inspiration behind The Schnitzel Wagon was heavily influenced by co-founder Robert, a U.S. Army veteran who spent eight years in the military, including several years stationed in Germany. During his time overseas, Robert developed a deep appreciation for German culture, traditions, and authentic German cuisine. Those experiences helped inspire the vision behind The Schnitzel Wagon and the desire to bring those comforting, flavorful dishes to Northern Colorado.
Combining Charlotte’s culinary background and passion for creating high-quality food with Robert’s experiences and inspiration from Germany, The Schnitzel Wagon was created to bring authentic German-inspired comfort food to the community. From hand-breaded schnitzels and bratwurst to pretzel bites and beer cheese, every dish is made with pride, quality ingredients, and a passion for sharing a taste of Germany with Northern Colorado.
